I'm not sure if there is any difference in the ice cream mixtures for soft serve and regular ice cream machines. I do have some recipes that I use in my cuisinart ice cream maker (which is not a soft serve machine). If it's okay to use regular recipes, you can try these.

I hope this helps,

Strawberry, Coconut Ice Cream - it's really easy and the kids love, chop up some fresh strawberries and place in a mixer with some vanilla ice cream and then add a bag of coconut flakes. Mix for a few seconds but don't overdo it. This ice cream is really good inside chocolate eclairs.

Peanut Butter Jelly Ice Cream - Take some vanilla ice cream and add a few spoonfulls of peanut butter and also a few spoonfulls of your favourite jelly, mix gently to combine, but not too much. Serve in a bowl with wafers and sprinkle a few chopped nuts over the top.
References :
http://www.submitmypage.com/Article/10-Quick---Easy-Ways-To-Make-Ice-Cream-Interesting/10434

Normally those recipies would call for raw eggs. Why not just go buy the mix frrom a kitchen store? Or a box of ice cream milk from a food supplier? Might be easier, and better tasting.
